day 21

???
not sure of this one's name. It's a milk chocolate sphere filled with citrus ganache sitting on sable cookie. It's basically a giant bonbon and it's very difficult to eat. This is a pastry they only make on the weekend so I haven't been able to get a hold of one until now. When I saw it this morning on the tray of leftover pastries from Sunday, I squirreled it away in the walk-in to take home at the end of the day.


...and in other news
David wasn't here today, which surprised everyone. It amazes me how he can come and go as he pleases, without being accountable to anyone. We started out the day without raspberries or strawberries, so the pastries for the shop had to be put on hold. Instead, I got to sheet out sucree dough and shape shells for individual raspberry tarts. I only did a sheet pan full because Jacques will be back tomorrow and will finish the rest. I also got to make pastry cream again today! Alexi seems to enjoy passing off tasks to me that he despises. I also got to do chestnut barquettes start to finish because he hates doing them as well.
Chef ended up coming in today and was in an exceptionally bad mood. Maybe it was the bad haircut it looked like he got over the weekend. I just tried to stay out of his way.
As far as production for the week, today we prepped Madisons (I cut out circles of chocolate genoise, soaked them in syrup and covered them in praline feuillantine) and made lemon curd (Alexi watched Natalie like a hawk to make sure she didn't end up with scrambled eggs instead of curd again). There really wasn't that much else to do so we left at 12:30.

  1. It's called St. Louis. I don't understand it. Congrats on making pastry cream. It sounds like Alexi is doing to you what I did to him. I always made him do the chestnut barquettes! What a pain in the ass to make!
